Sweet Potato & Wild Blueberry Pudding
This silky-smooth pudding is satiating, comforting, and so delicious. Sweet potato offers its sweet, grounding dependability in both flavor and healing benefits. Wild blueberry adds a plethora of antioxidants and a deep, rich, purple color that will delight the eyes and tastebuds. Enjoy this pudding without the whipped coconut cream for the most healing version, or enjoy it with the delicious coconut cream for a special treat!
Sweet potatoes have phytochemical properties that calm heated, angry, stagnant, sluggish, and toxic livers and help prevent spasming. They also offer a range of hormone-balancing phytochemicals for the liver; the liver uses sweet potatoes and yams to regulate and control some of its hormone functions.
Sweet Potato & Wild Blueberry Pudding
Ingredients:
- 2 lbs sweet potato, peeled and diced
- 3 tbsp wild blueberry powder
- 1/4-1/3 pure maple syrup, to taste
- 1/4-1/2 water, as needed to blend
- 1/2 tsp cinnamon or 1/4 tsp vanilla powder (optional)
- 1/2 cup coconut whipped cream, to serve (optional)
Directions:
Steam the sweet potato in a steamer or covered colander set over boiling water for 10-15 minutes, until tender when pierced with a fork. Remove and place in a blender together with the wild blueberry powder, maple syrup, water, and cinnamon or vanilla (if using). Blend until smooth, scraping down the sides and adding water as needed. Serve immediately, topped with a dollop of coconut whipped cream (if using) or refrigerate until needed.
